This is a ridiculously easy recipe which looks great left whole to serve, or sliced into wedges. I’m trying a more high fat/low carb food plan at the moment and cauliflower is a great veg to bulk up your plate and help fill you up for longer. I’ve had cauliflower rice recently too which is also yum, so this is just another way of spicing up your vegetable intake. I kept it beyond simple by making a powder rub from a combination of stuff I already had in my cupboards. Don’t be afraid to experiment using whatever you have to hand. Not every meal should require you to hit the shops… as long as you use a little imagination.

What you need…

As I said, this is flexible. But here’s what I used.

  • Whole head of cauliflower
  • 1 tbsp butter
  • 1 tsp ginger powder
  • 1 tsp garlic powder
  • 1 tsp tumeric
  • 1 tsp ground coriander
  • 1 tsp chili powder
  • 1/2 tsp curry powder
  • ground black pepper

How to do it…

Preheat your oven to 180ºC/350ºF/Gas 4

Remove the leaves from the cauliflower head and cut away the thickest of the stem, leaving a flat bottom for it to stand on.

Mix all your herbs and spices together in a bowl.

Smear the butter all over the cauliflower so it’s fully covered.

Gently sprinkle your powder rub all over the head allowing it to stick to the butter.

Place on a baking tray and bake in your oven for about 40mins, or until it’s a nice golden brown.
